Protein Pancakes!

I haven’t posted a receipe in a while, what is good about these pancakes, besides the taste, are the macros, they are not as hard on your bloodsugars as homemade or mix pancakes are. I am always looking for something that will adequately replace the high sugar, high fat originals. My wife is a master baker and cook, she has made up these receipes by trial and sometimes error, she is really a champion for Type 1 Diabetics! Enjoy!!

Pumpkin Protein Pancake

40 grams egg whites
50 grams pumpkin purée
25 grams raw oats
15 grams vanilla whey
10 grams almond meal
.5 tsp baking powder
1 tsp cinnamon
2 servings stevia

Mix well in a high speed blender till smooth. Pour into hot skillet and cook until edges are dry and bubbles pop. Flip. Cook a few minutes longer. Top with your favorites!
