This is a new item I learned about this year and is a great replacement for spaghetti noodles. Zoodles are zucchini noodles made using a spiralizer (search google or amazon, they are fairly inexpensive and can have multiple uses)

Today’s recipe is basically a vegetable side dish but we made it into a main dish by adding lots of spice and low sodium, low fat, turkey breast meat.

150 grams zucchini
100 grams tomato (I used cherry tomato)
200 grams bell pepper (I used multiple colors)
50 grams sweet onion
2 cloves garlic
1 Tbsp black pepper
1 Tbsp balsamic vinegar
200 grams Plainville farms turkey breast chopped into 1 inch pieces

Lightly spray a sauce pan and brown the turkey over medium heat. Add vegetables, spices, and about 1/4 cup water, cover and steam until vegetable are to desired consistency. I tend to add the tomato just before I remove it from the heat or they get too mushy for my liking.
